I’ve been serving pasta this way for years. I just am not that interested in pasta on its own. If I make too much, I always end up with a bowl full of leftover pasta that nobody wants to eat. So I’ve been drastically undercutting the amount of pasta in a dish for some time now. You can always cook up fresh pasta to deal with leftover sauce. Doing the reverse is much trickier.
